Apple Cranberry Overnight Oats

A couple weeks ago I went to visit some family near Amish Country and decided to stop by a little Amish bakery. I picked up some apple butter and decided to use it in some overnight oats. I also had some dried cranberries on hand that I bought when they were on sale so I decided to use them.


  • 1/2 Cup of Whole Grain Oats
  • 1/2 Cup of Almond Coconut Milk
  • 1-2 TBSP of Greek Yogurt
  • 2 TBSP of Apple Butter
  • 2 TBSP of Dried Cranberries
  • 1-2 TBSP of Sliced Almonds
  • 1 Pinch of Salt
  • 1 Scoop of Vital Proteins


Start by mixing the oats, milk, and apple butter together until combined. If you don’t have apple butter you can substitute with apple sauce or your favorite jam or jelly. Mix in the dried cranberries and place in the fridge to sit over night. You also have the option to add the dried cranberries at the end for a chewier texture. You can leave the oats cold or heat for 90 seconds. Mix in the almonds and Greek yogurt(and the dried cranberries if you haven’t already). Enjoy!
