Meal Prep – Week of June 21st

It has been a busy couple of weeks. My sister is in town so I have been going to my parents to visit her and have been very busy on the weekends. I have been busy working on a new project as well. I am hoping to get caught back up this week. I have found that all my posts about “just doing it” has really helped push me to get up and be productive. Being productive has also cut out some of my bad habits that result from boredom which is great! I am looking forward to a productive week!

Grocery List

  • Almond Coconut Milk Blend
  • Greek Yogurt
  • Peaches
  • Collard Greens
  • Cous Cous
  • Chicken
  • Italian Dressing
  • Cucumbers
  • Onion
  • Green Bell Pepper

Already on Hand

  • Apple Butter
  • Dried Cranberries
  • Oats
  • Vital Proteins

Breakfast

For breakfast this week I will be having apple cranberry overnight oats. I was inspired by apple butter I bought in Amish Country recently and I had some dried cranberries on hand so I decided to add them in for texture.

Lunch

For lunch this week I will be doing a peachy green smoothie. I froze my peaches ahead of time.

Dinner

For dinner this week I will be doing cous cous with marinaded chicken and a salad made out of cucumber, green bell pepper, and onion. I found a great pre-marinaded chicken breast at Aldi and had to try it. Aldi always has great prices and unique items.
