I did so much better last week than the week before. I am looking forward to continuing that success this week!

For breakfast I will be eating Greek yogurt with my raw granola bars(see recipe here). No prep work is necessary since I already made the granola. I will also be drinking a carrot juice with carrots, orange, apple, ginger, and turmeric. I have already peeled and chopped the carrots in preparation for this juice and lunch. I will probably prep the oranges the night before by slicing the peel off and cutting them into pieces small enough to put into the juicer. The carrot juice will be my snack between the yogurt and lunch.
For lunch I will be drinking a peanut butter and jelly smoothie. Stay tuned for the recipe this week. I am prepping by freezing the bananas ahead of time. I also bought 2 lb of strawberries because there was a deal that made it cheaper than buying 1 lb, so I froze half of the strawberries to use at another time. I will also be eating carrots with my lunch as a snack between the smoothie and dinner. I have already peeled and chopped the carrots.
For dinner I am doing something simple with chicken, wild rice, and green beans. Stay tuned later this week for the instructions for wild rice in the instant pot. I have prepped by getting the chicken in a marinade, making the rice, and stringing the green beans. I like to use leftover salad dressings as my marinades. It allows me to get more use out of the dressings if I don’t plan on using them offer.
I will be making a Twix inspired dessert this week. Stay tuned later in the week for the recipe. I will be using almond flour and coconut flour for the cookie, dates for the caramel, and just chocolate melted for the chocolate.
