I recently found a recipe for a raw granola on Instagram and it was so good! It’s the perfect snack by itself, topping for granola, or topping for a smoothie bowl! I found the recipe from @foodievis. They have a lot of great recipes so I highly recommend checking the page out!
- 2 Cups Quick Cook Oats
- 1 Cup of Dates
- 1-2 Tbsp Almond Milk
- 1 Pinch Himalayan Salt
- 2 Tbsp Honey
- 1 Tbsp Coconut Oil
- 1 Cup Slivered Almonds
- 1/2 Cup Dried Cranberries
Start by making a “Salted Caramel” out of the dates. Soak the dates in hot water for about 10 minutes.
Next, drain the dates and add them to the blender with the almond milk and Himalayan salt.
Blend until smooth. You will get a delicious caramel like substance, set aside.
Combine the oats, honey, coconut oil, slivered almonds, and dried cranberries in a bowl. Add whatever type of nuts and fruits you like in your granola. Mix until combined, then add the date caramel.
Once everything is combined, layer a square dish with parchment paper and press the mixture into the dish. Let it set in the fridge then cut into bars.
I have been eating it with yogurt all week, but it would make a great snack by itself!
