Avocado Brownies

When I first saw this recipe I was skeptical. I thought there was no way I would be able to get past the taste of the avocado. The picture looked so good, so I figured if they turned out anything like the black bean brownies I made(recipe here), they would be delicious. They were just as delicious as they looked! Not only are they delicious, but they are also super easy!

I adapted the recipe from Wellness to Awareness on Instagram. I definitely recommend checking her out for more recipes! I didn’t think this recipe would make much based on the ingredients, but it made a decent amount of brownies.

Ingredients

  • 1 Avocado
  • 2 Eggs
  • 1/2 Cup Cocoa Powder
  • 1 Cup Coconut Sugar
  • 1/2 Cup Peanut Butter
  • 1 TSP Vanilla Extract
  • 1 TSP Baking Powder

Directions

Preheat the oven to 325. Start by putting all ingredients in a food processor with a dough blade. If you don’t have a food processor you can mix by hand.

Next, pour the batter in a glass baking dish and place in the oven.

Bake for 35 minutes then let cool. It’s that simple! Enjoy!
