Peanut butter and jelly sandwiches are a comfort that takes us back to our childhood. Throughout the years my peanut butter and jelly sandwiches have gotten significantly more sophisticated. Recently, I came across a recipe for this PB&J sandwich cookie. This cookie not only satisfies my sweet tooth, it is also relatively healthy. The recipe makes 4 of the most amazing cookies I have ever eaten.

What you need for the cookies…
- 1/2 cup Peanut Butter
- 3/4 cup Almond Flour
- 1 TSP Vanilla
- 1/2 TSP salt
- 1/4 cup Agave
Preheat the oven to 350. In a mixing bowl combine all of the ingredients.
Roll the dough into 8 balls.
Press with a fork.
Bake in the oven for about 10 minutes until the cookie is just lightly golden around the edges.
What you need for the filling…
- 1/4 cup of Peanut Butter
- 2 TBSP of Agave
Mix until combined.
Wait for the cookies to cool. Spread the peanut butter mixture over half the cookies. On the other cookies spread your favorite jelly. CLICK HERE for the recipe for my favorite blackberry chia jam.
Press one of the peanut butter sides with the jelly sides and enjoy!
