Back to Normal – Meal Prep Week of March 22

After a week of not having a strict routine and meal plan it will be nice to get back on track. I did not have many successes while on vacation. I am excited to be back in control over my daily meals and snacks. I was planning on doing a juice cleanse, but due to the corona virus and all of the uncertainty surrounding it I am opting to just eat extra fruits and veggies and make sure I have staples in my kitchen in case there is an extended quarantine. I got back on Saturday and ate sausage and pancakes for lunch. I did well and only ate until I was full. For dinner I had a corn muffin, pulled pork, and baked beans. Again, I ate only until I was full. It was a good day for food choices.

I didn’t really have a strict meal plan in mind when I went grocery shopping. I was focused on making healthy choices and getting food that can last a couple of weeks in case a nationwide or statewide quarantine is announced.

  • Almond/Coconut Milk


For breakfast I plan on having protein shakes. They are easy and quick. They also keep me full until lunchtime. I found these packs of protein powder that dissolve in the liquid of choice. When I first saw them I was going to pass because typically convenience means paying more per serving. These, however, were the same price for a big container AND had a coupon for $5 off.


Lunch will depend on whether there is a nationwide or statewide quarantine. If I go to work then I will have apples and carrot sticks with peanut butter. If I don’t go to work due to a quarantine I will probably mix things up daily with different fruits and veggies along with peanut butter and french onion dip.


For dinner this week I plan on having honey mustard marinated pork chops with carrot apple slaw. Click Here for the carrot apple slaw recipe. This most likely won’t change unless I decide to mix up the seasonings on the pork. I plan on saving the chicken, rice, and other veggies for next week.


My snacks will be eaten throughout the day whether I am quarantined or not. If I go to work I will take a couple with me to push away cravings and hunger. If I don’t go to work I will reach for a healthy snack when I am hungry.
